Grilled Feta Slices
With Roasted Tomato Basil Relish , and Pita Toasts

Yield:  4 servings

INGREDIENTS: 
4 each 4 oz. Slices of President Feta Cheese 
12 oz.  Extra Virgin Olive Oil 
2 T.   Garlic, chopped 
2 T.  Fresh Mint, chopped 
2 T.  Fresh Dill, chopped 
1 T. Dried Greek Oregano Leaf, Crumbled 
1 T.  Red Pepper Flakes 
  
Roasted Tomato Relish: 
1- ( 28 oz.) Can Diced Fire Roasted Tomatoes, drained 
4 oz.  Balsamic Vinegar 
1 T. Light Brown sugar 
1 oz. Greek Ouzo  
6 oz. Extra Virgin Olive Oil 
1 C. Fresh Basil, Chopped 
To taste Sea Salt, and Fresh Ground Black Pepper 
  
4 each Pita Breads, (6” Rounds)   

PROCEDURE:   ****Preheat a Gas Grill to High****

- Place the Feta Cheese in a shallow casserole dish in one layer.
- Combine the next six ingredients in a mixing bowl, mix well.
- Pour the mixture over the Feta Cheese, and marinate at room temperature for 1 hour.
- Combine the ingredients for the Roasted Tomato Relish in a 12 inch nonstick sauté pan. Heat over low flame for five minutes, reserve warm.
- Remove the Feta from the marinade, and lightly blot the excess oil off of the Cheese.
- Grill on the preheated Gas Grill and quickly brown the cheese on both sides (about 5 minutes total cooking time).
- Place the Pita Bread on the grill to toast. Cut each Pita into 6 wedges.
Place one slice of the Grilled Feta on each of four warm 9” plates.
- Spoon a liberal ¼ C. of the Roasted Tomato relish on the center of each portion of Feta.
- Serve each portion with warm pita wedges.
